The Royal Cafe in Copenhagen sells this delicious love child of gastronaut Rud Christiansen.

Smushi is traditional Danish smørrebrød cut into bite-size pieces and topped with little pieces of sushi-inspired food art.

For those that can’t decide, they offer a great platter with three smushis of your liking. So before you know it you will be trying some smørrebrød topped with smoked halibut and shrimp, or spiced herring with red beet salad and quail eggs – delicious!

And don’t you just love the name! Just say it… smushi 🙂
